Almond Shortbread Cookies

These cookies are super simple to make and are the perfect combination at crunchy with a chewy inside. Perfect for when you're having guests over for tea or coffee!

Ingredients


150g ground almonds


4 tbsp of maple syrup


1/4 tbsp of vanilla extract


1/2 two of bicarbonate of soda


1/4 tbsp of sea salt


2 squares of 85% dark chocolate


1 tsp of coconut oil

Method 

(Preheat oven to 180°)


In a bowl mix the ground almonds, salt, vanilla extract, maple syrup and bicarbonate of soda. 


Using a wooden spoon mix all the ingredients until it forms a dough. Roll the dough into a ball and leave in the fridge to set for 15minutes.


Melt the coconut oil and dark chocolate together over a low heat until the chocolate is glossy and smooth.


Roll the dough out (approx 1.5cm deep) and using a use a cookie cutter cut out as many shapes as the mixture will allow.


Bake for 10 minutes, until cookies are slightly golden. Allow to cool and then deep in the chocolate mixture.
