Chocolate Quinoa Crispy Bites

I get asked all the time for healthy, low sugar snack ideas. Something that tastes great and has health benefits, so I thought it would be the perfect time to share this super simple and nutrient-dense snack that you can take with you on the go!

Ingredients:

  • 50g coconut oil

  • 2 squares of 85% dark chocolate

  • 2 heaped tsp of raw cacao

  • 1tsp of vanilla extract

  • 4 tbsp of puffed quinoa

  • desicated coocnut

  • 1 tbsp of nut butter (I went for cashew butter)

Method:

  • Melt the coconut in a large bowl and add the 2 squares of dark chocolate until melted.

  • Add the cacao powder, vanilla and puffed quinoa and until everything is coated in chocolate.

  • Cover a bread time with parchment paper and pour the liquid mixture over the top.

  • Freeze for 5-7 minutes until majority of the mixture has set, but still soft enough to allow the toppings to stick.

  • Top with whatever you have in your presses (I added cashew butter and desicated coconut), then freeze for 10-15 minutes.

  • Remove and break into small 'bite size' pieces and store in the freezer!

Note: This snack is low in sugar, but contains healthy fats which means it's slightly high on the calorie scale. Enjoy in moderation, alongside a balanced diet that includes plenty of plants!
