Chocolate Quinoa Crispy Bites
I get asked all the time for healthy, low sugar snack ideas. Something that tastes great and has health benefits, so I thought it would be the perfect time to share this super simple and nutrient-dense snack that you can take with you on the go!
Ingredients:
50g coconut oil
2 squares of 85% dark chocolate
2 heaped tsp of raw cacao
1tsp of vanilla extract
4 tbsp of puffed quinoa
desicated coocnut
1 tbsp of nut butter (I went for cashew butter)
Method:

Melt the coconut in a large bowl and add the 2 squares of dark chocolate until melted.
Add the cacao powder, vanilla and puffed quinoa and until everything is coated in chocolate.
Cover a bread time with parchment paper and pour the liquid mixture over the top.
Freeze for 5-7 minutes until majority of the mixture has set, but still soft enough to allow the toppings to stick.
Top with whatever you have in your presses (I added cashew butter and desicated coconut), then freeze for 10-15 minutes.
Remove and break into small 'bite size' pieces and store in the freezer!
Note: This snack is low in sugar, but contains healthy fats which means it's slightly high on the calorie scale. Enjoy in moderation, alongside a balanced diet that includes plenty of plants!
