Blueberry Banana Bread
This recipe is super simple, low maintenance and a favourite in our household! INGREDIENTS: ● 250g rolled oats (gluten-free if required) ● 75g mixed nuts & seeds (walnuts) ● 1tbsp baking powder ● 1tbsp bicarbonate of soda ● A pinch of salt ● 3 bananas, peeled (keep one for the top) ● 1 free-range eggs ● 1tbsp maple syrup (or honey) ● 240g natural yogurt (or a dairy-free alternative) ● 50g fresh or frozen blueberries. METHOD: 1. Preheat the oven to 180 °C, grease a loaf tin or line with parchment paper. 2. In a medium-sized bowl, stir in the oats, nuts, and seeds, baking powder, bicarbonate of soda and salt together. 3. In a blender, blend two of the bananas, maple syrup, yoghurt and egg until smooth. 4. Add the wet mix to the oat mix and stir until combined and all the oats are covered. 5. Fold in blueberries with a spatula, then pour into the tin. 6. Bake for 40 minutes covered with tinfoil, then remove the tinfoil and cook for a further 40 minutes, until a knife inserted into the center comes out clean and dry. 7. Place on a wire rack and allow to cool before slicing. 8. Try not to eat the entire loaf in one sitting 😋
