Spiced Sweet Potato & Courgette Fritters 💥👅
These delicious fritters are the perfect companion to your poached eggs and avocado. I like to make mine in a big batch and freeze some for a later date.
1 medium courgette
1 medium sweet potato
3 tbsp of ground almonds or chickpea flour
1/2 tsp chili powder
1/2 tsp garlic powder
Salt & pepper
Start by grating the sweet potato and courgette. Place the grated vegetables into a clean clothes or a double layer of kitchen paper, and squeeze any our any excess liquid.
Place into a bowl with the remaining ingredients and mix well.
Heat a large frying pan with butter or coconut oil.
Next separate the mix into roughly 6 medium or 4 large sized patties and cook for 4-5 minutes on each side.
You can also oven bake them for 20mins. I prefer to fry mine as they get nice and crispy around the edges.
Add 2 poached eggs, some avocado and a side salad for perfect the meal 👌
